since the first thing you would do at the gym would be to pick the workout plan, "plan" should be the first screen you are greeted with on start up after an extended time away from the app.
but for an hour or so after starting the app it should go back to the last used page if you switch screens

Plans depend upon exercises (or existing data) so it doesn't make sense for this to be the start screen by default. I'm also hesitant to add a setting for choosing the startup screen since any extra state I add to App.tsx will have performance implications.
